Eggplant Caviar
2 Large Eggplants
1/2 Jar Flame-Boy Tomato Salsa
1 Clove Garlic, Minced
1 TBSP. Lemon Juice
2 TBSP. Olive Oil
2 TBSP. Tahini (optional)
Salt and Pepper

Best with Flame-Boy Tomato Salsa:
Roast whole eggplants in a 375 degree
oven for an hour. Cool and peel eggplant,
and place in food processor or blender
with remaining ingredients. Season with
salt and pepper. Blend until smooth.

Serve with pita bread, corn tortilla
chips, crackers, or fresh bread slices!
